I’m just too fluffy to have a whole batch of brownies sitting around. But I just need my fix sometimes. And I can get it by eating ONE. But it just doesn’t stop there. Because I spend 50% of my time in the kitchen, and so the leftover brownies that I didn’t allow the kids to eat are taunting me. And these are truly the best brownies I have ever made, using a mix or homemade.
I’m just going to tell you, I am pretty sold on using mixes with brownies. One, it’s easy. Two, it is really hard to do it better homemade.
The best brownie I have ever had was at Ghirardelli. Oh my. And it got me to thinking…I happen to have a container of Ghirardelli Sweet Ground Chocolate in my pantry. Why? Well, a few years back my husband was loving chocolate in his coffee at home, and so we bought that as a stir in. Then, sometime later, when he went “black” with his coffee, I started using the ground chocoloate for Double Chocolate Chip Cookies.
So let’s review my problems:
- Too many brownies around the house when I make a batch.
- Kids want brownies.
- I don’t have a Ghirardelli bakery close by me.
- I’ve got Ghirardelli Sweet Ground Chocolate on hand that needs consuming.
- I have no willpower around brownies.
- Kids are asking for brownies.
So, I set out to solve my problems. First, I decided that I would try turning my Sweet Ground Chocolate into a mix, so that making brownies would be super simple. Yes, you can actually buy a box mix of Ghirardelli brand brownies…but then you have the extras around!
After I made my mix, I figured out the perfect ingredient amounts to make just two perfect brownies. And, you should know that I made around 6 batches before it was mom AND KID approved! Lol!
I use a whole 48oz. container of Ghirardelli Sweet Ground Chocolate for this mix. Here is what it looks like and where to buy it (since I used to buy it at my local grocery and they stopped stocking it…I now buy it on Amazon).
This mix will make 60 brownies. So, 30 batches of 2 brownies. The entire mix is about 15 cups total, so you need a large container to store your mix.

Yes, they actually get brownies more often now that I don’t worry about my waistline every time I make them. And, I don’t have to fight them to not eat too many! WIN-WIN

Ingredients
Brownie Mix
48oz. can of Ghirardelli Sweet Ground Chocolate
5 cups flour
2 cups sugar
2 t. baking powder
2 t. salt
Brownies
2 T. butter, melted
1/2 cup Brownie Mix
1/8 cup Egg (yolk plus some egg white)
Couple drops of vanilla
Instructions
- Preheat oven to 350°. You will need a small glass bowl. Melt 2 tablespoons of butter in the microwave. Add 1/2 cup of Brownie Mix to the bowl. Add just a dash of vanilla. Stir that up good.
- Now, the egg is the one part that you must get right. This calls for only 1/8 cup of egg. First, crack your egg and separate the whites into a bowl. Put the yolk in a 1/8 measuring cup. Then beat your egg white a little, just so it doesn’t stick together as much. Then add egg white to fill up the 1/8 measuring cup. Add the 1/8 cup of egg, and then stir.
- Spread batter in a mini loaf pan. I use a smaller mini loaf (yes, there is a difference) to get my brownies slightly thicker. Bake for 18 minutes at 350°. Check and cook longer until the top has a full crust. No need to check the middle with a toothpick.
